EASY EATS: Mike and Terri’s Chili

Our across the golf course neighbors were kind enough to share a recipe with me. Since it is officially fall, I think I can get away with featuring their chili. This is easy because you use a crock pot.

Mike and Terri’s Chili

1 1/2 lbs. ground beef, browned and drained

1 yellow, one red bell pepper, and one onion, diced and sautéed in 2T. oil

1 15 oz. can kidney beans,

2 15 oz. cans pinto beans,

1 32 oz. diced stewed tomatoes

1 pkt. Lawry’s chili seasoning

Combine all ingredients, including the liquid in the cans of beans into a crock pot and set on low. Forget it for about 6 to 8 hours, then enjoy the savory goodness. 

Mike likes to use yellow and red bell peppers to give the chili a pop of colors. He has also used fresh tomatoes instead of canned. Their family’s favorite chili accompaniments are sourdough rolls with butter, and grated cheddar cheese. What do you like with your chili?
