EASY EATS: Stuffed Bell Peppers

The most wonderful aroma of this dish will fill your house.

The fall season makes me think of comfort foods. Today’s recipe is a favorite comfort food of my son-in-law, Tom who fondly remembers this dish growing up in a Lebanese household.

4 green bell peppers (medium to large), tops cut off and inside carefully scooped out

1 pound of ground beef

Salt and pepper to taste

1 box of flavored long grain wild rice

1 medium size can tomato sauce

Water

In a large bowl put the ground beef, salt and pepper to taste, long grain wild rice with flavoring packet, and mix together by hand. Fill the bell peppers with the meat mixture, compressing just enough to keep it together. Once the meat is in the bell pepper take a knife and gently pierce the top of the meat so that it allows the sauce and water to penetrate.

Pour tomato sauce over the bell peppers. Then pour enough water into the pot to cover the top of the bell peppers. You will need to add a little more water as the bell peppers are cooking. Heat on the stove uncovered, until the water is boiling, then reduce to a simmer. After 20 minutes, cover pot and continuing simmering.  Cook for about an hour total, checking the water level periodically.

The most wonderful aroma of this dish will fill your house. When done cooking take the pot off the stove and let cool for about 5 minutes, then serve in a soup bowl, adding some of the juice. Enjoy!
